Strawberry & Vanilla Jam
~ Midsummer ~You will need
- 900g ripe strawberries
- 750g jam sugar
- 1 vanilla pod, split
- juice of one lemon
Method
- Hull the berries and crush half with a fork.
- Warm gently with sugar until dissolved.
- Boil hard to setting point, ~8 minutes.
- Rest, stir in vanilla seeds, then pot up.
Skim the pink foam and save it on warm bread — the cook's reward.
