Strawberry & Vanilla Jam

~ Midsummer ~
You will need
  • 900g ripe strawberries
  • 750g jam sugar
  • 1 vanilla pod, split
  • juice of one lemon
Method
  1. Hull the berries and crush half with a fork.
  2. Warm gently with sugar until dissolved.
  3. Boil hard to setting point, ~8 minutes.
  4. Rest, stir in vanilla seeds, then pot up.
Skim the pink foam and save it on warm bread — the cook's reward.
